Ingredients
- Marinade:
- 1 can Black Eyed Peas (drained & rinsed)
- 1 can Black Beans (drained & rinsed)
- 1 cup frozen Kernel Corn (thawed)
- 1 cup diced Green Peppers
- 1 cup diced Red Peppers
- 1 cup diced Celery
- 1 diced White or Red Onion
- minced Jalapenos (to taste)
- 3/4 cup Olive Oil
- 3/4 cup Sugar (can substitute Splenda)
- 3/4 cup Apple Cider Vinegar

Preparation
Step 1
Place all prepared vegetables and beans in large bowl.
In small sauce pan combine marinade ingredients and heat until dissolved. Cool slightly and pour over mixture.
Marinate overnight. Drain off marinade prior to serving if desired.
Serve with tortilla chips (scoops).
