- 10 timberdoodle (woodcock) breasts
- 5 strips bacon halved
- 1 cup Italian salad dressing
- 1/2 cup soy sauce
- 2 teaspoons garlic powder
- 1 teaspoon fresh-ground
- Freshly-ground black pepper to taste
Wrap each woodcock breast with half a bacon strip. Secure with toothpicks. Place in a zip-seal plastic bag, add Italian dressing and seal. Marinate 2 to 3 hours, turning occasionally.
Drain off Italian dressing. Mix soy sauce, garlic powder and pepper. Pour over bird breasts in bag, and marinate 1 hour longer.
Remove breasts from marinade, and grill over low heat until bacon is just crisp (10 to 15 minutes).
