Ingredients
- FOR THE SPREAD:
- 8 oz cream cheese, at room temp
- 10 1/2 oz montrachet or other mild goat cheese, at room temp
- 2 cloves garlic, minced
- 1/2 tsp minced fresh thyme leaves
- 3 TBSP minced fresh parsley
- 5 to 6 TBSP milk, half-and-half, or heavy cream
- 3/4 tsp kosher salt
- 1/2 tsp freshly ground black pepper
- FOR THE SANDWICHES:
- 2 loaves 7-grain bread, thinly sliced
- 1 hothouse cucumber, thinly sliced

SPREAD:
Place the cream cheese, goat cheese, garlic, thyme, parsley, 5 TBSP milk, salt, and pepper in a bowl; beat on medium speed til well mixed. Add an additional TBSP of milk if the spread is too thick.
SANDWICHES:
Spread each slice of bread with the goat cheese mixture. Place the cucumber slices on half of the slices and top with remaining bread. Press lightly, trim off the crusts, and cut the sandwiches into halves, thirds, or triangles.
