Cauliflower with Cheese Sauce

MY NOTES: I like to add different cheeses besides the Cheddar to the mix for a better taste. Parmesan, for one. Mozzerella is another.

Ingredients
- 1 tsp. salt, divided
- 1 head cauliflower, broken into flowerets
- 2 tbsp. butter
- 2 tbsp. all-purpose flour
- Dash of pepper
- Dash of paprika (optional)
- 1 c. milk
- 1 c. shredded Cheddar cheese

Preparation
Step 1
Bring 1 inch of water to a boil with 1/2 teaspoon salt in a medium saucepan; add cauliflower. Cover and cook 8-10 minutes, until crisp tender. Drain and keep warm.
Melt butter in small saucepan over medium heat; add flour, 1/2 teaspoon salt, pepper and paprika, if desired. Cook and stir 3 minutes or until bubbly. Gradually stir in milk; cook, stirring constantly, until smooth and thickened. Add cheese and stir until melted.
Arrange cauliflower on platter and spoon cheeses sauce over top. Makes 6-8 servings.
