Ingredients

  • 1 (14 oz) can garbanzo beans drained and rinsed
  • 1 clove garlic, finely chopped
  • 1 t. ground cumin
  • 4 scallions (spring onions)thinly sliced
  • 3 tbsp sour cream
  • Salt and freshly ground pepper
  • 2 tbsp all-purpose (plain) flour
  • 1/4 c. extra virgin olive oil
  • Tzatziki
  • Mixed salad grains, to serve
  • Lemon wedges, to serve

Preparation

Step 1

Combine the garbanzo beans, fatlic, cujin, scallions, and sour cream in a food processor.
Process until smooth.
Transfer to a large bowl and season with salt and pepper.
Shape the mixture into eight patties.
Dust lightly with flour.
Fry the patties in batches in the oil in a large frying pan until golden, about 3 minutes on each side.
Serve the patties with the tzatzikik, salad and lemon wedges.
