Ingredients
- 2 tbsp olive oil
- 2 large onions
- 1 green pepper, diced
- 2 celery stalks, diced
- 3 medium garlic cloves, finely chopped
- 2 tsp oregano
- 1 tsp basil
- 1/2 tsp thyme
- 2 bay leaves
- 2 lbs lean ground beef
- 3 - 19 oz cans tomatoes (drained, reserve juice and puree tomatoes)
- 2 tsp brown sugar
- 10 oz chicken stock
- 1 cup dry red wine
- 11 oz tomato paste
- 14 oz tomato sauce
- salt and pepper to taste
- 2 cups old cheddar cheese (grated)
- 4 cups chopped mushrooms

Preparation
Step 1
Heat olive oil. Saute onions, green peppers, celery, garlic, oregano, basil, thyme, and bay leaves for 5 minutes. Add ground beef and saute for 5 more minutes. Add tomato puree and brown sugar. Heat to boiling. Add remaining ingredients and simmer 2 hours.
