Ingredients

  • 1/2 cup low fat plain yogurt
  • 1 1/2 teaspoons mayonnaise
  • Juice of 1 lemon
  • 1 green onion, finely chopped (white and green parts)
  • 1/4 cup finely chopped cucumber
  • 2 cloves garlic, pressed
  • 1 pound ground beef or lamb OR both
  • 2 green onions, finely chopped
  • 1/2 cup minced garlic
  • 1/2 teaspoon dried oregano
  • 1/8 teaspoon ground cumin
  • 1/8 teaspoon dried parsley flakes
  • 1/2 teaspoon salt
  • 1/8 teaspoon freshly ground black pepper
  • 4 large pita breads
  • 4 (10-inch) metal OR bamboo skewers

Preparation

Step 1

In a small bowl, combine first 6 ingredients (yogurt through pressed garlic); set aside. Preheat grill to MEDIUM-HIGH. In a medium bowl, place remaining ingredients, except pita bread. With your very clean hands, mix until well combined and stiff; separate into 4 portions. On each skewer pack 1 portion of meat mixture, about 5 inches long and not more than 3 inches in diameter. Grill for 10 to 15 minutes, turning frequently. Using the pita bread, slide the gyros into the centers; drizzle with sauce. Fold over and enjoy!
