Ingredients

  • CREAM CHEESE BATTER:
  • One 8 oz. package cream cheese
  • 1 egg
  • 1/3 cup sugar
  • 1/8 teaspoon salt
  • 1 cup chocolate chips
  • CHOCOLATE BATTER:
  • 1 1/2 cups flour
  • 1/4 cup cocoa
  • 1/2 teaspoon salt
  • 1/3 cup oil
  • 1 cup sugar
  • 1 teaspoon baking soda
  • 1 cup water
  • 1 tablespoon white vinegar
  • 1 teaspoon vanilla
  • TOPPING:
  • Sugar
  • Nuts

Preparation

Step 1

Cream Cheese Batter - Combine cream cheese, egg, sugar and salt in bowl. Beat well with mixer; stir in chocolate chips. Set aside.

Chocolate Batter - Mix together flour, sugar, cocoa, baking soda, and salt. Stir in water, oil, vinegar and vanilla. Beat well. Set aside.

Fill muffin tin papers 1/3 full with chocolate batter. Top each with heaping teaspoon of cream cheese mixture. Sprinkle with sugar and nuts.

Bake at 350 degrees for 30-35 minutes.

IMPORTANT: COOL AT LEAST 4 HOURS BEFORE SERVING.

These cupcakes freeze very well.
