Ingredients

  • 1 pound fresh crabmeat
  • 1 Tablespoon mayonnaise
  • 1 teaspoon Old Bay Seasoning
  • 1/4 teaspoon dry mustard
  • 1 tablespoon Worcestershire Sauce
  • 1/4 teaspoon salt
  • 1 tablespoon chopped Parsley
  • 1 egg beaten
  • 1/2 cup dried bread crumbs
  • Clarified butter or vegetable oil

Step 1

Mix all ingredients in a bowl, combining gently with your hands or a rubber spatula. Shape into small rounds, flatten slightly with a metal spatula and fry in clarified butter or vegetable oil, turning once until crab cakes are brown. Serve with lemon wedges or chopped tomatoes mixed with basil, olive oil, salt and pepper and top the crab cakes. Makes 4 servings
