Ingredients
- 4 cups sauerkraut, rinsed and drained
- 1 medium onion, finely chopped
- 1 green pepper, chopped
- 1 cup celery, sliced
- 1/2 cups shredded carrot, packed
- 1 cup sugar
- 1/3 cup salad oil
- 1/2 cup vinegar
- 1/4 cup cold water

Step 1
In a large bowl, combine sauerkraut, onion, green pepper, celery and carrots. Set aside. In a medium bowl, combine sugar, oil, vinegar and cold water. Stir until sugar is completely dissolved. Pour over sauerkraut mixture and let stand overnight. Serve the next day.
