Oatmeal Cake

Ingredients

• 1 1/4 cups boiling water
• 1 cup oatmeal
• 1/2 cup margarine
• 1 cup sugar
• 1 cup brown sugar
• 2 beaten eggs
• 1/4 tsp salt
• 1 1/3 cup flour
• 1 tsp baking soda
• 1/2 tsp cinnamon
• Topping
• 6 Tbsp margarine
• 1/4 cup evaporated milk
• 1 cup brown sugar
• 1 cup coconut
• 1 cup chopped nuts
• 1 tsp vanilla

Preparation

Step 1

Pour water over oatmeal and margarine. Let stand 20 minutes. Add sugars, eggs and sifted dry ingredients. Pour into 9" x 13" pan and bake for 35 min at 350°F. Mix all topping ingredients and spread on hot cake. Put under broiler for 3-5 min until icing bubbles. Watch carefully as it burns easily.
