Ingredients

  • 12 oz. fettuccine
  • 1 T olive oil
  • 1 lb. Italian sausage, broken into 1/2 inch chunks
  • 2 T minced garlic
  • 1/2 cup sliced onions
  • 1 lb. zuchini
  • 2 medium tomatoes cut in 1" chunks
  • 1/2 t freshly ground pepper
  • 2/3 cup shredded Parmesan cheese

Preparation

Step 1

Cook pasta according to package directions. Drain, return to pot, and set aside.

Meanwhile, in a large frying pan, heat oil over high heat. Add sausage and cook, stirring often, until cooked through, about 5 min. Transfer sausage to a plate and set aside.

In the same pan, over high heat, cook garlic, onion, and zuchini until starting to brown, about 4 min. Stir in tomatoes, pepper, and reserved sausage and cook until heated through, about 3 min.

Combine sausage mixture with reserved pasta and transfer to large serving bowl. Sprinkle with parmesan
