Pirri Pirri Sauce

Is spicy Sout American sauce equally good on beef or fish.Make this several days ahead to allow the flavours to commingle.It will keep well in fride,sealed,for 2 weeks.

Ingredients
- 2 cups olive oil
- 2 whole poblano chiles,roasted,peeled,and seeded
- 2 jalapeno peppers,chopped and stems removed(keep seeds.use robber gloves on)
- 1 tsp red chile flakes
- 1 tsp salt
- 1 tsp black pepper
- 1 Tbsp minced garlic,about 3 cloves
- 4 springs cilantro,washed and chopped,stem ends removed

Preparation
Step 1
Combine the olive oil,chile peppers,chile flakes,salt,and black pepper in saucepan.Bring the liquit to a boil and reduce the head.Simmer the sauce for 4 min. and remove from heat.
Stir in the garlic and cilantro.With a hand-held mixer,or careffully using a blender,puree the sauce until smooth.Refrigerate the sauce for at least one day before serving.The sauce can be served at room temperature.
