Something I learned in the Belize jungle from the Mayas = how to cook a chicken on a fire. In the US, we cut the chicken up into pieces and then bbq it = all juices drip out and the pieces cook at uneven temp and get dried out.

Its simple. just take a whole bird and slice thru the center of the breast and cut thru the cartilage...and then grab the breasts and turn out till you pop the ribs...when done right it will then sit on the cutting board like a squashed frog.

Then rub it full of spices to taste (if you want to do BBQ sauce, etc., then lay it on the top when cooking after you flip in on the bone side).....cook skin down to brown and then turn bones side down and slow cook for 45 min or so at 350-375 - the bird cooks evenly. When done turn off and let it sit in warm place for 10-15 min and then cut up.

You will never bbq chicken any way again after u do it once. just have to flip one time and its done.
