Ingredients
- 2 cups (1-inch diagonally sliced) asparagus
- 2 cups sliced carrots
- 1 1/2 cups snow peas
- 1 Tbsp olive oil
- 1/2 cup chopped onion
- 2 garlic cloves, minced
- 6 cups hot cooked fettuccine (10 oz)
- 1/2 cup (2 ounces) grated fresh Parmesan, divided
- 1/4 cup chopped fresh parsley
- 2 Tbsps dry white wine
- 1/2 tsp salt
- 1/2 tsp pepper

Preparation
Step 1
Drop the first 3 ingredients into a large saucepan of boiling water; cook 2 minutes. Drain and set aside.
Heat oil in a Dutch oven over medium heat. Add onion and garlic; sauté 2 minutes or until tender. Remove from heat.
Add asparagus mixture, fettuccine, ¼ cup cheese, parsley, wine, salt and pepper; toss well. Top with remaining cheese
