Chicken in Lime Butter

Ingredients
- 4 boneless skinless chicken breast halves (4 ounces each)
- 1/8 teaspoon salt
- 1/8 teaspoon pepper
- 2 tablespoons canola oil
- 1/4 cup butter, cubed
- 1 tablespoon lime juice
- 1/2 teaspoon dill weed
- 1/4 teaspoon minced chives

Step 1
Sprinkle chicken with salt and pepper. In a large skillet, cook chicken in oil over medium heat for 5-7 minutes on each side or until a meat thermometer reaches 170°; drain. Remove and keep warm.
Add butter and lime juice to the skillet; cook and stir until butter is melted. Stir in dill and chives. Drizzle over chicken. Yield: 4 servings.

What a great flavor! I use hawaiian sea salt and Costco's pepper to season the chicken and the kids eat it that way, and then my husband and I use the lime butter on top after slicing our chicken to let it soak in. I've made this twice in the past month and it's so good and so easy! I drain the pan after cooking the chicken before making the sauce.
Good recipe, but I would recomend cutting the amount of butter to a couple tablespoons. Otherwise it is swimming in butter.
I made this the other night and shared some with my Grandma. Now, my Grandma is very particular and rarely gives me a compliment when it comes to my cooking....but this recipe she loved! I'll be sure to make this one again!
I love this recipe. It is so easy and wonderfully delicious. Although the dill adds a special flavor, it's still very good without it.
This was delicious! I make a little more of the butter sauce than called for.
