No matter the season, our Wintry Baked Beef Stew is a one-dish
meal that delivers comfort. The secret ingredient to this stew’s
creamy, rich sauce is none other than quick-cooking tapioca.

MY NOTES: I served this when Walter was visiting and we all thought it was delicious. I do think it needs some extra liquid though. Jack liked it so much he claimed dibs on the leftovers!

Ingredients

  • 2 pounds beef stew meat, cut into 1-inch chunks
  • 4 large carrots, peeled and cut into 1-inch chunks
  • 4 potatoes, peeled and cut into 1-inch chunks
  • 1 medium-sized onion, chopped
  • 2 cups tomato juice
  • 1 cup water
  • 3 tablespoons quick-cooking tapioca
  • 1 teaspoon sugar
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Step 1

1. Preheat oven to 350°F. Coat a 9" x 13" baking dish or 2-quart roaster with cooking spray.

2. In a large bowl, combine beef, carrots, potatoes, and onion. In a medium bowl, combine tomato juice, water, tapioca, sugar, salt, and pepper; mix well. Pour tomato mixture over beef mixture; mix well then pour into prepared baking dish and cover with aluminum foil.

3. Bake 2 to 2-1/4 hours, or until beef is tender.

I made this meal after seeing it on TV and it was delicious! This one pot dinner was quick and easy and I plan to keep it on my favorite list.

I made this on Sunday and it was very easy. Since I didn't have tapioca I used the same amount of corn starch. This is excellent, easy and smells great when its cooking. Very filling.

I have never done a stew in the oven before. This is the only way I will do it from now on.This recipe was the best.

I'm going to try this it is a lot easier than what I usually do.

Making today, no quick cooking tapioca in house. Substituting equal amounts of flour, I am sure it will be fine.

Making this now.. instead of beef, I'm using venison :) smells great!!
