Ingredients

  • Cookies:
  • 1 roll (16.5 oz) Pillsbury refrigerated sugar cookies
  • 1/2 cup all-purpose flour
  • 1/2 teaspoon almond extract
  • 1 tablespoon granulated sugar
  • ....................
  • Filling:
  • 2 cups powdered sugar
  • 1/4 cup butter or margarine, softened
  • 4 teaspoons milk
  • 1/4 teaspoon almond extract
  • 1 drop red food color

Preparation

Step 1

1. Heat oven to 350°F. In large bowl, break up cookie dough. Stir or knead in flour and almond extract until well blended.

2. Shape dough into 180 (1/2-inch) balls. Place balls 1 inch apart on ungreased cookie sheets. Press bottom of glass dipped into granulated sugar on each ball until 1/4 inch thick; prick top of each with a fork.

3. Bake 6 to 8 minutes until set but not brown. Cool 1 minute; remove from cookie sheets to cooling rack. Cool completely, about 15 minutes.

4. Meanwhile, in small bowl, beat filling ingredients with electric mixer on low speed until smooth and creamy. Spread about 1 teaspoon filling on bottoms of half of the cookies. Top each with another cookie, bottom side down; press gently. Store in refrigerator.

Expert Tips:
For a more festive platter, add a drop of food color to the filling. For more sparkle, use coarse granulated sugar.

WONDERFUL- so quick-easy-elegant. I am Scandinavian so Almond Cookies are a staple but do take a careful hand. The other woman who added extra almond extract I think was right on target - just gives them extra 'punch'. A touch of jam (raspberry is nice) along w-the filling is great. A dot of raspberry jam on top is also a nice taste & decorative. As to the 1 woman who wanted them 'crunchy'--they would have to be rolled VERY thin to achieve that, you must monitor temp & time in oven CLOSELY - burned & broken cookies will never really work for making a sandwich cookie. I made these a little bigger, so I got 4 dozen. They were a hit at the bridal shower I took them too - tinted the filling to match the wedding colors (or close as I could). Will definitely make them again

I made these cookies to package as party favors for my daughter's first birthday. I put 3 cookies in a clear bag, tagged them and tied them with cute details and they were so dainty and perfect! These cookies are very sweet! I actually made two batches, and got 180 cookies out of each batch. The balls for the cookies should be fairly small, and when you push them down with the glass, don't push down too far or the cookies will spread (unless you like crunchy cookies!) I prefer mine on the softer side. All in all, I would make these again. You could easily switch up the extract flavors, as well as the colors for the icing, and use these cookies for many occasions.

These were really good cookies but kind of sweet. I could never get 180 cookies out of these. I used a 1/2 teaspoon and it made 96 cookies or 48 sandwiches so I guesss in order to get the 180 you would have to use 1/4 teaspoon which in my opinion would make them extremely small. Mine came out a pefect bite size. Kids loved them.
