Ingredients
- 1 onion, chopped
- 2 garlic cloves, minced
- 1 T olive oil
- 1 T butter
- 28 - oz can whole plum tomatoes, chopped, reserving the juice (or fresh tomatoes, peeled, seeded, and chopped)
- 29 - oz can tomato puree
- 1 large baking potato, peeled and cubed
- 2 cups chicken broth
- 2 cups 1 % milk
- salt and pepper to taste
- 1/4 cup chopped fresh herbs (basil, dill, thyme, etc.)
- 1/2 cup plain low-fat yogurt for garnish, optional

Preparation
Step 1
In saucepan, cook onion and garlic in oil for 5 minutes or until softened. Add the tomatoes with juice, tomato puree, potato, and chicken broth and simmer, covered, for 30 minutes. Puree in blender and return to pan. Whisk in the milk, salt, and pepper and heat through. Garnish portions with herbs and yogurt, if desired.
