Ingredients

  • 1 - 12 oz. pkg. of brown sugar and honey breakfast sausage links 9preferably Johnsonville0
  • 2 1/2 about 2 1/2 lbs. yukon gold potatoes, peeled and cut into 1" cubes
  • 1 1/2 cups shredded cheddar cheese
  • 1 egg
  • 1/4 cup light cream
  • salt

Preparation

Step 1

Place potatoes in a pot with enough water to fully cover them. Add a good pinch of salt, and bring the water up to a boil. Boil potatoes for 10-12 minutes or until fork tender, but not overcooked. Once cooked, drain and set aside.

Cook sausage according to directions. Once cooked, cut into bite-size pieces.

Preheat oven to 400 degrees.

In a baking dish, combine the potatoes, sausage and 1 cup of cheese.

In a bowl, whisk the egg and cream together. Add to the casserole and mix gently to fully coat everything in the egg mixture.

top with the remaining cheese, and cook fr about 15 minutes to melt the cheese, then place under he broiler to brown for about 3 minutes. Make sure not to burn.
