Ingredients

  • BARBECUE SAUCE:
  • 1 (3-4 lb.) chuck roast
  • 1/2 cup flour
  • 1 tsp salt
  • Pepper, to taste
  • 2 onions, sliced
  • ........................
  • 2/3 cup catsup
  • 2/3 cup water
  • 1 Tbsp Worcestershire sauce
  • 3 Tbsp soy sauce
  • 1/2 cup brown sugar
  • 1/8 tsp liquid smoke (optional)

Preparation

Step 1

1. Dredge roast with flour, salt and pepper. (I used Paula Deen's House Seasoning Mix!)


2. Place roast in a Dutch oven. Add sliced onions.

3. Combine catsup, water, Worcestershire sauce, soy sauce and brown sugar. Pour over roast. Cover and place in 325 degree oven. Bake for 3-3 1/2 hours.

Last hour, add peeled and cut potatoes and carrots, if desired.
