Step 1
purchase trim and tied from Fairway. Let it sit out for 35 minutes to get the meat to room temp . season with salt and pepper. put rack in the roasting pan. put roast on rack. set oven to 425 degrees for 30-40 minutes. When done it should have an internal temp of around 140 for medium rare (145 after standing) 155 for medium (160 after standing) *** Let stand 10-15 minutes before cutting.
