Ingredients

  • Dressing:
  • 2 med. golden beets
  • 2 med. red beets
  • 1 med. orange
  • 1/3 C olive oil
  • 2 T red wine vinegar
  • 1 T finely chopped basil
  • 1 t minced garlic
  • 1/2 t kosher salt
  • Freshly ground pepper
  • 1 large red onion cut into 4 1/2" slices
  • 2 hearts of romain lettuce

Preparation

Step 1

Scrub beets. Lightly spray or brush with olive oil. Grill over indirect med heat til tender when pierced with fork, 1-1 1/2 hrs. Remove from grill & allow to cool enough to handle. Rub off skins and slice beets.
Mix dressing ingredients: Zest orange rind to make 2 T. Cut remaining skin and white pith from orange & working over a bowl, separate orange into sections, letting sections and any juice fall into the bowl. Add reserved zest and remaining ingredients to orange orange sections. Gently stir to combine.
Lightly brush onion slices with some of dressing & gtrill over Direct med heat til tender, @ 10-12 min. Remove from grill & let cool slightly, then separate into rings. Add to beets and dressing. Serve over lettuce leaves.
