Ingredients
- 1 cup low sodium beef broth
- 1 to 2 pounds cooked and very thinly sliced beef pastrami
- 4 slices Havarti cheese
- Coarse grind mustard
- 8 slices artisan dark rye bread
- Dill pickles (optional)

Preparation
Step 1
In a medium saucepan, bring broth to a boil; add pastrami, reduce heat and maintain at a simmer. Spread mustard on one side of each slice of bread then divide meat evenly on 4 slices of the bread, using 4 ounces for thinner sandwiches and 8 ounces for thick; add cheese and remaining 4 slices of bread. Serve dill pickles on the side if desired.
Microwave Version: Assemble bread and pastrami into 4 sandwiches; wrap each firmly in a paper towel and microwave on HIGH for 1 minute, turning once halfway through cooking cycle. Offer mustard at the table.
