  • 3 medium potatoes
  • cooking spray
  • 1 t garlic salt
  • 1/8 c Parmesan cheese, grated

Preheat oven to 425.

Slice potatoes 1/8 inch thick. This is best done with a mandolin.

Place a sheet of aluminum foil on a baking sheet. Trace a circle onto onto the foil and then coat with cooking spray.

Place one layer of potatoes onto the foil in the circular shape. Sprinkle with garlic salt and Parmesan. Continue layer potatoes, salt and cheese until all potatoes have been used. The stack should be about 1 1/2 inches high.

Bake in a 425 oven for 40-45 minutes or until the potatoes are fork tender.

Slice into wedges and serve.
