Banana cake

Ingredients

• Banana Cake
• 1 cup butter or margarine
• 1 cup white sugar
• 2 eggs
• 4 Tbsp. sour milk
• (1/2 tsp. Vinegar and ¼ cup milk)
• 1 tsp. Baking soda
• 2 cups sifted flour
• 2 tsp. Baking powder
• ¼ tsp. Salt
• 1 tsp. Vanilla
• 1 cup mashed bananas ( at least 2 med)
• Icing
• 3 Tbsp. margarine
• ½ tsp. Vanilla
• 2 Tbsp. cream
• 1 ½ cups icing sugar.

Preparation

Step 1

Cream butter, add sugar, then beaten eggs.
Add bananas and vanilla.
Dissolve soda and milk.
Sift flour with baking powder and salt and add alternately with milk.
Bake in moderate oven about 45 minutes at 350.

Use 8 inch square pan.

icing
Beat all together with mixer until smooth and creamy.
This makes icing for top of square cake only. To ice sides as well, add ½ cup icing sugar and 1 to 2 tsp milk.
(for chocolate icing add 2 to 3 Tbsp. cocoa.)
