Ingredients
- 1 lb ground beef
- 1 yellow onion - finely chopped
- 4 cloves of garlic
- 1 can (16 oz) vegetarian refried beans
- 1 jar (16 oz) salsa
- 1 c. shredded sharp cheese
- 2 serrano chilies, seeded & finely chopped
- 2 heirloom tomatoes
- 2 c. shredded lettuce
- 1/3 c. lowfat sour cream or yogurt w/squirt of fresh lime juice
- 1/3 c. chopped fresh cilantro
- Hot sauce
Preparation
Step 1
In a large skillet over med-hi heat, stir beef & onion until brown & cooked thru (6 min.)
Add garlic, stirring frequently - 1min.
Drain excess oils & transfer to slow cooker
Stir in beans, salsa, cheddar cheese & serranos
Cover & cook on hi 3 - 4 hours
Stir & serve over warmed tortillas
top w/tomatoes, lettuce & sour cream
Garnish w/cilantro
Add hot sauce
