Blueberry Peach Streusel Bars

Ingredients
- 1 1/2 C fresh peaches, sliced
- 1 C fresh blueberries
- 3 tbsp sugar
- 1/2 tbsp cornstarch
- 1/2 tsp cinnamon
- 1/4 tsp ginger
- 3/4 C white whole wheat or all-purpose flour
- 3/4 C quick oats
- 6 tbsp brown sugar
- 1/4 tsp baking soda
- 1/4 tsp salt
- 6 tbsp butter

Step 1
In a large bowl, gently stir together peaches, blueberries, sugar, cornstarch, cinnamon, and ginger. Set aside.
Preheat oven to 350. Lightly spray an 8×8 inch baking dish with non-stick cooking spray.
Whisk together flour, oats, brown sugar, baking soda, and salt. Cut in butter with a pastry blender or fork until mixture resembles coarse crumbs.
Press half of oat mixture into the bottom of prepared baking dish. Spread fruit over the top. Top with remaining oat mixture.
Bake for 20-25 minutes or until streusel just starts to turn golden brown.
Remove to a wire rack to cool. Serve warm.
