Elaine's Macaroni Salad

Well, we tried that macaroni salad and Rich absolutely loved it!
He usually doesn't go on about food but this time he did. I thought it good too but would change only one thing and that would be how much yellow mustard you put in. This macaroni salad is really flavorful. Although it is a mayonnaise base, it's not at all heavy like most salads and doesn't lack flavor. - Elaine

Ingredients
- For one pound of elbow macaroni cooked al dente, assemble the following and use a wire whisk to blend:
- 1 cup mayonnaise
- 1/4 cup vinegar
- 2/3 cup sugar
- 2 tablespoons yellow mustard
- 1-1/2 teaspoons salt
- 1/2 teaspoon pepper

Preparation
Step 1
Mix with cooked elbows and add:
1/4 cup grated carrot
2 ribs celery, sliced
1 green pepper, diced fine
1 onion, diced fine
2 tablespoons pimento, chopped
Refrigerate and chill well before serving.
