Ingredients
- 5-lb. beef rib roast
- 1/4 to 1/2 c. balsamic vinegar
- 2 T. garlic, minced
- 2 T. fresh thyme, chopped, or 2 t. dried thyme
- 1 T. fresh rosemary, chopped, or 1 t. dried rosemary
- 2 T. salt
- 1 T. olive oil

Preparation
Step 1
Place roast fat-side up in shallow roasting pan. Brush entire surface with balsamic vinegar. In small bowl, combine remaining ingredients. Coat top, sides and ends of beef with garlic mixture. Bake, uncovered, at 450 degrees for 15 minutes. Reduce heat to 325 degrees. Bake for 20 minutes longer per pound, or until a meat thermometer reads 145 degrees for rare or 160 degrees for medium. Remove from oven; tent with aluminum foil and let stand for 10 to 15 minutes. Slice; serve with pan drippings.
