A family favorite ever since I was a kid! Mom made these all the time with boiled potatoes! Also great served with mashed potatoes!

Ingredients

  • 1 pound ground beef
  • 1/2 cup regular rice, uncooked
  • 1 egg
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
  • 2 tablespoons minced onion (optional)
  • 1 10 3/4 oz can tomato soup
  • 3/4-1 soup can water
  • 4 potatoes, peeled and cut up

Step 1

Mix ground beef, egg, onion, spices and rice and 1/4 cup tomato soup. Shape into balls. Brown meatballs in 350 degree oven for 20 minutes. In dutch oven, mix tomato soup and 3/4-1 soup can water. Add meatballs and potatoes; bring to a boil, cover and simmer for 1 hour.

NOTES: Some recipes suggest adding 2 tablespoons of brown sugar and 2 teaspoons of Worcestershore sauce to the tomato soup. Some recipe just add 1/4 cup ketchup to the soup instead. I have never tried these additions.
