This spread is similar to a vegetarian version of pate. It is great on crackers or pita chips, but you could also use it in a sandwich or even as a side dish with chicken or meat.

Ingredients

  • 3 c. diced onions
  • 1 tbsp olive oil
  • 3 tbsp + 1 1/2 c. water
  • 1/2 c lentils
  • 2 tbsp sherry
  • 1/2 t salt
  • 1/2 t ground black pepper
  • 1 t. chopped fresh sage
  • 2 tbsp chopped fresh parsley

Step 1

In a medium heavy-bottomed saucepan, combine the onions, oil, and 3 tbsp of the water. Cook over medium ehat, stirring occasionally, until the onions are just golden, about 15 mintues.
Add the lentils and remaining 1 1/2 c water, cover, and cook over very low heat for 1 hour, stirring occasionally.
Stir in the sherry, salt, and pepper and cook, uncovered, over medium ehat until the compote is thick about 5 minutes. Remove from the heat, add the sage and parsley, and let cool.
