- CRUMMY CHICKEN:
- 1 chicken breast
- 1/4 cup Corn Flake crumbs
- 1 teaspoon dry Ranch Dressing Mix
- 1/4 cup Parmesan cheese
- Melted butter

- TWICE-BAKED POTATO:
- 1 medium baking potatoes
- 1 tablespoons butter or margarine, softened
- 1 tablespoon milk
- 1/8 teaspoon salt
- 1 1/2 oz cream cheese, cubed
- 1 tablespoons sour cream
- Paprika

Step 1
CHICKEN:
Pound one chicken breast and cut in two pieces. Mix 1/4 cup Corn Flake crumbs, 1 teaspoon (dry) Ranch dressing mix, and 1/4 cup Parmesan cheese. Dip chicken in melted butter, then in Corn Flakes mixture. Place in greased dish and bake at 350 degrees for 30 minutes.
POTATO:
Pierce potato and bake at 375 degrees F for 1 hour or until tender. Cool. Cut a thin slice off the top of potato. Scoop out the pulp and place in a mixing bowl. Add butter, milk and salt; beat until fluffy. Beat in cream cheese and sour cream. Spoon into potato shell. Sprinkle with paprika. Place on a baking sheet. Bake, uncovered, at 350 degrees F for 20-25 minutes or until heated through and tops are golden brown.
