Cream Cheese Filled Strawberries

- 1 pound Fresh Strawberries
- 8 oz. cream cheese
- 1/2 cup powdered sugar
- 1/2 tsp vanilla extract
- 1/3 of a pint container of blueberries

Using a paring knife, cut off the strawberry stems. Cut around the inside of the strawberry, hollowing out the strawberry slightly and creating a well for the cream cheese mixture. *A small melon baller works well for the hollowing out part of this recipe. Cut off a small portion of the pointed strawberry tip so that each strawberry will stand on its own. Place each of the strawberry on the bottom of a glass dish.
In a medium bowl, beat the cream cheese, powdered sugar, and vanilla until the mixture is fluffy (about 2 minutes on Medium speed). Place the mixture in an icing tube or pastry bag and pipe the cream cheese into each strawberry and adding a little extra to the top. Add one blueberry to the top of the cream cheese and refrigerate until thoroughly chilled or until ready to serve.
**To add a little flare to the recipe, you can sprinkle a little bit of crushed graham cracker crumbs to the top of the cream cheese before adding the blueberry.
**Do not allow the strawberries to sit out at room temperature for very long or they will begin to sweat and become soggy.
