- New potatoes or other small round potatoes
- Olive oil
- Kosher salt
- Black pepper
- Rosemary or desired herbs

Step 1
Cook as many potatoes as you wish in a pot of salted water until fork-tender. On a sheet pan, generously drizzle olive oil. Place tender potatoes on the cookie sheet leaving plenty of room between. With potato masher, gently press down each potato until it slightly mashes, rotate the masher 90 degrees and mashe again gently. Brush the tops of each potato generously with olive oil. Sprinkle the potatoes with kosher salt, fresh ground black pepper and fresh chopped rosemary (or chives, thyme or herb of choice). Bake at 450 degrees for 20 to 25 minutes, until golden brown.
