Ingredients

  • 3 large eggs
  • 1 cup brown sugar
  • 1 cup white sugar
  • 1 cup salad oil
  • 3 cups zucchini, peeled
  • and grated
  • 3 cups flour (use 1/2 whole wheat)
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1 tsp salt
  • 1 tsp cinnamon
  • 3 tsps vanilla
  • 3/4 - 1 cup chopped nuts

Preparation

Step 1

Beat eggs; add oil, zucchini, sugar and vanilla. Mix lightly but well. Add dry ingredients. Mix until well blended. Pour into 2 loaf pans.

Bake at 325 degrees for about 1 hour until light brown. Cool for 10 minutes in pans before turning onto cooling rack. This keeps well and slices easily when refrigerated.
