Ingredients

  • 1 pkg yellow cake mix or pudding included in cake mix
  • 1 1/2 C milk
  • 1 C sugar
  • 2 C coconut
  • 3 1/2 C or 1 8oz Cool Whip

Preparation

Step 1

1. Prepare cake mix as directed on pkg, baking in 13x9 pan. Cool 15 min., then poke holes down thru cake w/ utility fork.

2. Meanwhile, combine milk, sugar and 1 C of the coconut in saucepan. Bring to a boil, reduce heat and simmer 1 minute. Carefully spoon over warm cake, allowing liquid to soak down thru holes. Cool completely.

3. Fold 1 C of the coconut into whipped topping and spread over cake. Sprinkle w/ remaining coconut.

4. Chill overnight. Store leftover cake in refrig.
