Ingredients
- 8 oz cream cheese, at room temp
- 4 oz soft goat cheese
- 4 oz shredded Cheddar cheese
- 2 ears corn, cooked on gril, kernels removed
- 2 green onions, thinly sliced
- Salt and Pepper
- 12 jalapeno chilies, halved, stemmed and seeded
- 1 tsp. ancho chili powder

Step 1
Heat grill to medium. Whisk together the cream cheese and goat cheese in a medium bowl until smooth. Fold in the Cheddar cheese, corn and green onions. Season with salt and pepper. Fill each jalapeno with about 2 tablespoons of the cheese mixture and sprinkle the top with ancho chili powder. Place on the grill, filling-side up, cook until slightly charred and tender, about 7 to 8 minutes.
