Ingredients

  • 1 boneless skinless chicken breasts
  • 2 teaspoons barbecue sauce ( she recommends Bull's Eye)
  • 2 slices crisp bacon ( should be very crispy)
  • 1/4 cup monterey jack and cheddar cheese blend

Preparation

Step 1

Pound chicken breast until it is somewhat flattened, and season with salt and pepper.

Spray Pam in a nonstick skillet, and cook chicken breast until it is done. Transfer to a serving plate.

Top chicken breast with Barbeque sauce, bacon, and cheese. Broil chicken breast in the oven, or melt the cheese in a microwave.

Sprinkle with a small amount of cold chopped tomatoes and chives.

This was one of the best dinners I've made in a while! Everyone loved it! Even my 2 youngest that wanted their chicken left plain kept asking for a bite of mine! I grilled the chicken then topped it with left over bacon from breakfast, Sweet Baby Ray's honey bbq sauce, cheese and chives then popped it in the toaster oven on broil for a short time. Quick and easy, especially when using already cooked bacon!

I followed the recipe exactly and ended up with a definite 'restaurant quality' meal. It was really good.

Pretty tasty and quick. Prepared this with my homemade bbq sauce, thick cut bacon left over from breakfast, and locally made Bothwell cheddar cheese. I cooked the chicken breasts in a Foreman grill, then topped and finished them off under the broiler in the toaster oven. Nothing too special or particularly healthy about this recipe, but it was indeed tasty. I'm sure my husband will enjoy it.


Great recipe. I worked at Chili's for a couple of years and absolutely love this dish. The only thing is in order to make it truly authentic you need to cook the chicken on a gas grill, not over the stove, and it's best to melt the cheese under a broiler. That's how they do it at the restaurant. Other than that it's perfect.

This was good! I cooked the chicken in the bacon drippings instead of PAM for extra flavor.

Everyone at the table adored this. Very delicious chicken. I dusted it with some of Emeril's Essence along with salt and pepper before sauteing. And I didn't use a lot of barbeque sauce on each piece, just a thin spreading. Topped with chopped cold tomatoes, green onion and parsley before serving. Great, great, great!


Scrumptious chicken! I had this at another restaurant than Chilis and loved it so I was looking for a recipe. I'm glad I found this one. It was so good my DH said how good it was 3 different times. Thanks for posting it and I'll definitely serve it again.

I've made this several times now, and it is delicious everytime.Tonight I served it on slices of toasted sourdough bread, with mayo and tomato slices.It was absolutely awesome!Everyone loved it!

I made enough servicgs for ten people hoping to have leftovers to take for lunch the next day, but there were none to be found! I gave this recipe 4 stars. My family really liked this recipe. I had some chicken breasts to use up and found this recipe. I followed the recipe as directed except I added more bacon and I used big pinches of cheese. Overall we will have this again!

I used to work at Chili's and this was always one of the things I used to recommend so I was delighted to find it here. Since we can't get montery jack or cheddar where I live (I know!) I used aged gouda and it came out perfect.

I am usually not a huge fan of whole chicken breast meals, but this is SO good! Bacon, BBQ sauce, and cheese? You can't go wrong!

This recipe is excellent, same as Chili's.

We had this 'as is', not as a sandwich.. great combination of flavors.. have made this many times, its worth the repeat, my kids ALL love this. Like another reviewer suggested, I pre-prepped this - I grill these on the George Foreman, build it, then fix the rest of dinner.. finally broil when we're ready. Great tip!

This is pretty much like Chili's, except for the chicken is grilled (obviously lol) and we use parsley, not chives on top.

Very good and simple to make. The whole family loved it. I cooked the bacon in the oven to free up space on the stove to cook the chicken. I used monterey/colby cheese on top. This will become a regular dish in my household.

This is my favorite from Chili's. I used the Jimmy Dean pre-cooked bacon to save some time and it tasted wonderful, will make often, thanks!

This was very good! I made my bacon in the oven (since I was going to turn it on anyway) and it was extra crispy! The combination of the chicken, bbq sauce, bacon, and cheese was outstanding!

This was awesome! Easy to make, but it could be made ahead of time and then assembled and broiled last minute. I served mine up on a plate with garlic mashed taters and a salad. A keeper!

Outstanding!! I used this for our Christmas Eve dinner and it was well received. Looking at the review above, I didn't realize it was a sandwich. Worked great just on the plate with the rest of the meal!!
