Ingredients

  • 2 tbsp begetable oil
  • 1 stalk celery, chopped
  • 1 onion, finely chopped
  • 1 clove garlic, minced
  • 1 15 ox can black beans, rinsed and drained
  • 1 large egg, lightly beaten
  • 1 tbsp cumin
  • 1/2 c. plain bread crumbs
  • Salt and pepper

Step 1

Preheat oven to 375. Grease a large, rimmed baking sheet.
Warm oil in a skillet over medium-high het. Add celery and onion. Stir 3-5 minutes. Add galic and saute 1 minute longer
Pour beans into a bowl and mash into a thick paste. Add celery mixture, eg, cumin and bread crumbs. Season with salt and pepepr. Form into 4 patties and bake on baking sheet until firm and set, about 10 mintues on each side. Serve on whole-grain buns with lettuce, tomato and sliced red onion.
