Bourbon Basted Salmon

Here's my all-time favorite grilling recipe. No-fail, gorgeous and healthy. Plus, it has bourbon! This is an AMAZING recipe. Quick easy marinade that is short on effort and long on taste. For best results marinate the fish overnight. This recipe will accommodate up to 1.5 lbs of salmon. Reduce or increase proportions as needed. If you don’t have scallions readily available, you can substitute about 3 generous shakes of dried onion flakes. This may be the best salmon you have ever tasted. It browns beautifully and has a unique, slightly sweet, flavor. Once you try this recipe for salmon, you will come back to it over and over again. This recipe is also good on chicken.

Ingredients
- MARINADE:
- 1/4 cup packed brown sugar
- 3 tablespoons Bourbon whiskey
- 3 tablespoons chopped green onions
- 2 tablespoons soy sauce
- 2 tablespoons vegetable oil
- .................
- 3 (1" thick) salmon fillets or steaks (each about 8 oz.)

Step 1
Whisk together all ingredients in a bowl until sugar is dissolved. Pour over fish. Refrigerate marinating container up to 24 hours, rotating the dish a couple of time to fully coat fish. For best results marinate overnight.
Line baking pan with aluminum foil and place salmon skin side down.
Bake, uncovered, at 450 degrees, basting 2 or 3 times, until fish flakes easily when tested with tip of small knife, 15 to 20 minutes or you can cook salmon on an oiled grill, turning once, about 7 minutes per side.
The marinade can be boiled down into a glaze while the salmon cooks to make a sauce. This may be the best salmon you've ever tasted!
