Ingredients
- 3 Tablespoons of olive oil
- 4 medium Zucchini's, chopped into cubes
- 1/2 cup chopped red onions
- 1 garlic clove, crushed
- 3 fresh corn ears cut off the cob (or 1 cup of frozen corn)
- 1/2 cup of Mozzarella
- 1/4 cup of shredded Parmesan
- Salt and Pepper to taste

Step 1
Heat your oven to 350°F.
In large skillet, heat your olive oil on medium high heat and put in your onions and garlic. Cook and stir for 5 min. or until onions are tender. Stir in zucchini; cook 8 to 10 min. or until zucchini is lightly browned, stirring occasionally. Remove from heat and add corn, cheese, and salt and pepper.
Place into a 9X9 pan and bake uncovered for 15 minutes. Remove and serve.
