Ingredients

  • 3/4 pound sweet or hot Italian sausage, or a combination of the two, removed from casings and crumbled

Preparation

Step 1

Warm a large, deep skillet over medium heat. Add the sausage and cook, stirring frequently, until browned, about 5 minutes.

Add the tomatoes, oregano, 3/4 teaspoon of salt and 1/4 teaspoon of black pepper and bring to a boil. Reduce the heat to medium-low, cover partially and simmer until thickened, about 30 minutes.

Meanwhile, cook the shells in boiling salted water until tender but firm, about 10 minutes. Drain and add to the sauce. Cook, stirring, until thoroughly combined, about 1 minute.

Remove the pasta from the heat. Add the mozzarella; toss to combine and serve.
