Ingredients
- Cake:
- 1 pkg white cake mix
- 1 3-oz pkg instant lemon pudding mix
- 1 cup water
- 4 egg whites
- 2 Tablespoons oil
- ......................
- Icing:
- 1 8-oz cream cheese, softened
- 1/4 c butter, softened
- 2 T lemon juice
- 1 16-oz pkg powdered sugar

Preparation
Step 1
Preheat oven to 350. Combine cake ingredients on low until moistened then on med for 2 min. Batter will be thick. Spoon into 24 paper-lined muffin cups.
Bake 21-24 min or til done. Cool in pan 10 min. Remove to wire rack & cool completely.
Beat 1st 3 icing ingredients til blended. Gradually add sugar. Ice cupcakes
Special Extra: Blend 1 tsp. lemon zest into frosting before spreading onto cupcakes.
