Jack's Strawberry Breakfast Bars

MY NOTES: I used Strawberry POLLANER All-Fruit, which Jack bought by accident thinking it was jam - but it turned out to be a lucky thing because Jack really LOVED these bars and thought they tasted slightly like fig squares. I also made a confectioner's sugar/water glaze fo the top (with a smidge of vanilla) which made them extra-delicious! The glaze dried when it set, which I like. I used about 1 cup of confectioner's sugar and 1-2 Tablespoons of water.

Ingredients

  • 1 cup flour
  • 1 cup rolled oats
  • 1/2 cup butter, softened
  • 1/3 cup light brown sugar
  • 1/4 teaspoon baking powder
  • 1/8 teaspoon salt
  • 3/4 cup strawberry jam

Step 1

1. Preheat the oven to 350 degrees.

2. In a large bowl, combine the flour, the rolled oats, the butter, light brown sugar, baking powder and salt. With your spoon break up the butter and try to spread it around. You may need to put the spoon aside and use your hands to really combine the mixture.
Spray the pan with a non-stick cooking spray. Measure out 2 cups of the mixture and pour it into the pan. Press the mixture into the bottom of the pan. You can use a spoon or your hands. Make sure you cover the entire bottom of the pan.

3. Pour the strawberry jam on top of the mixture. Using your scraper, spread it evenly all over the pan.
Take the rest of the mixture that was left in the bowl, and spread it over the strawberry jam. Press it down lightly.

4. Put it into the oven. After 25 minutes, remove the pan from the oven. Allow it to cool for at least 15 minutes. Cut the bars into 12 squares. Eat and enjoy.
