Mexican Chicken Spaghetti

Ingredients
- 6 oz. spaghetti
- 1 1/2 c. chopped tomatoes
- 1/2 c. chopped scallions
- 2 T. minced fresh cilantro
- 1 T. fresh lime juice
- 1 T. oil.
- 2 t. minced jalapeno pepper
- 3/4 t. salt
- 2 t. mild or hot chili powder
- 3/4 t. ground cumin
- pinch ground red pepper
- 1 lb. chicken breast

Preparation
Step 1
Combine tomatoes, scallions, minced cilantro, juice, 2 t. oil, jalapeno pepper and 1/4. t. salt. Set aside
Combine chili powder, cumin, red pepper, and salt, season chicken evenly.
Cook chicken in 1 t. oil over medium-high heat until browned on all sides and cooked through.
Pour tomato mixture over warm spaghetti, toss to combine. Top with cooked chicken. Garnish with cilantro
