    chicken breasts, boned, skinned, halved

  • ½

    cup melted butter or margarine

  • Salt, pepper, flour

  • 6

    slices mozzarella cheese

  • 1

    beaten egg

  • Bread crumbs

  • 2

    tbs chopped parsley

  • ¼

    tsp oregano

  • ½

    dry white wine


Flatten chicken between sheets of wax paper. Spread flattened breasts with half the butter. Season with salt and pepper and place one slice cheese on top of each. Roll chicken, tucking in ends. Coat lightly with flour. Dip in beaten egg. Roll in bread crumbs. Arrange chicken rolls, seam side down in a shallow baking dish. (If making ahead, refrigerate at this point). Melt remaining butter and herbs. Bake at 350 degrees for 30 minutes, basting with herb butter mixture. Pour in wine and bake 20 minutes more, basting with pan liquid.
