Ingredients
- 3 russet potatoes (about 8 oucnes each), peeled, and cut lengthwise into 10-12 wedges.
- 5 tablespoons peanut oil
- salt and pepper

Preparation
Step 1
1) Adjust oven lowest position and preheat to 475 degrees.
2) Place potatoes in large bowl and cover with hot water; soak for about 10 minutes.
3) Evenly coat a 18 X 12 inch rimmed baking sheet with 4 tablespoons peanut oil. Sprinkle with 1 teaspoon kosher salt and 1/4 teaspoon black pepper.
4) Drain potatoes and completely wipe and dry. Toss them with 1 tablesppon peanut oil and layer in one layer on the prepared baking sheet.
5) Cover tightly with foil and bake for 5 minutes. Remove foil and bake for 15 minutes or until bottoms are browned. Turn potatoes and bake another 10-15 minutes.
Drain, salt and serve.
