  • 1 cup whole wheat pastry flour
  • 1/4 cup quick cooking oats
  • 1 teaspoon cinnamon
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/3 cup packed brown sugar
  • 3 1/2 tablespoons canola oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 small Granny Smith apple, peeled, cored, and shredded
  • 1 medium carrot, shredded
  • 1/2 cup shredded zucchini
  • 1/2 cup raisins

Step 1

1. Preheat oven to 375F. Line 12- cup muffin pan with paper liners
2.Whisk together flour, oats, cinnamon, baking soda, bakingowder, and salt in medium bowl. Whisk together brown sugar, oil, eggs, and vanilla in large bowl. Stirring. Apple, carrot, zucchini, and raisin. Add flour mixture and stir just until combined.
3. Spoon batter into prepared muffin cups. Bake until toothpick inserted in centers comes out clean, about 20 minutes. Col in pan on rack 10 minutes. Remove muffins from pan and cool completely on rack.
