Simple Tiramisu Cupcakes

It’s easy to make your own ladyfinger cake bottom. Cream cheese makes it easy and simple.

- Ingredients for Ladyfingers:
- 1/2 cup flour or cake flour
- 1/2 tsp. baking powder
- 3 eggs, at room temperature
- 6 Tbsp. powdered sugar
- 1/2 tsp. vanilla extract
- 1/8 tsp. cream of tartar
- Ingredients for Tiramisu:
- 1 package of cream cheese (8 oz.), soften
- 1 cup of heavy whipping cream
- 1 cup powdered sugar
- 1/2 cup brewed coffee, cool
- Coco powder for sprinkle

Preparation
Step 1
Directions for ladyfingers:
Preheat oven to 400 F. Line a 12 cupcake tin with cupcake liners.
Place egg whites in a bowl and beat on high until soft peaks start to form. Slowly add 3 tablespoons of powdered sugar and cream of tartar, continue beating until stiff and glossy.
In another bowl, beat egg yolks and remaining sugar. Whip until thick and very pale in color.
In a small bowl, whisk together flour and baking powder.
Fold half the egg whites into the egg yolk mixture. Fold in flour, and then add the remaining egg whites.
Divide and spoon the batter between the cupcake liners. The cupcake liners will not be filled to the top.
Bake for 8 minutes.
Put it together:
In a large mixing bowl, whisk cream and sugar until stiff peak form.
In another bowl, whisk cream cheese until soft and creamy. Fold in whipped cream and sugar mixture, until blend well. Chill in the refrigerator while preparing the cake bottoms.
Use a folk to poke holes in the ladyfinger cake bottoms. Pour about 1 Tbsp. brewed coffee over the cakes. Add more coffee if you like strong coffee taste.
Spoon chilled cream cheese mixture over the cake bottom, sprinkle with coco powder. Decorate with you favorite chocolate as you prefer.
